Grandma’s Marble Cake

If you know me, you know how crazy I am about my grandmother’s cake recipe. (You can read more here) We bake it at least twice a month around here. I say I make it for the kids...but we all know that's a little far from the truth. So, here's the recipe that I've watched my grandma make 10s of times, and got to lick the batter off the spatula, every time! I cannot guarantee yours will be as delicious as mine ;) but I can tell you frankly that the secret ingredient is “love.”


Let's get to it, this isn't a food blog.


 

Ingredients:

  • 2 cups sugar

  • 3 cups flour

  • 6 eggs

  • 2 tsp baking powder

  • 1 tsp baking soda

  • 1 tsp salt

  • 1 tbsp vanilla extract

  • 2/3 cup salted butter

  • 1/3 cup vegetable oil

  • 1 cup Greek Yogurt

  • 1/3 cup whole milk

  • 1/3 cup cocoa powder

 

Directions:

  1. Preheat oven to 180°C (350°F)

  2. Whisk together sugar + softened butter + oil for about 4 minutes.

  3. Add the eggs & vanilla to the batter and mix until smooth for another 4 minutes.

  4. Switch to using the "mixing tool" on your machine. Sift the flour, baking powder, baking soda, and salt together in a bowl, and add them gradually to the batter, along with the yogurt and milk.

  5. Continue mixing for another 3 minutes.

  6. Pour 7/8 of the batter into two 9" loaf pans.

  7. Add the cocoa powder and 2 tbs of milk to the remaining batter and mix for 1 minute.

  8. Pour the chocolate batter into the loaf pans, and stick the loaf pans into the oven for one hour.

 

You can always add chocolate chips into the batter as well.


Pro Tip:

Do NOT open the oven before the hour is up to check on the cake.

Let cake cool completely before transferring out of pans and slicing up!
